Breakfast Hash!
Do you struggle with what to eat for breakfast? Get tired of the same ole same ole? I love a good breakfast hash and they have become a go to! They are so filling and full of flavor! My favorite way is to just throw something together with the foods I have on hand! Using leftovers makes it so easy. The recipe below includes all foods I had on hand, some precooked and some fresh. It is so simple. I have literally used left over asparagus before!
Rotisserie Chicken (from the store already pulled apart)
Sauteed Sweet Potato + Butternut Squash chunks
Diced bell pepper
Diced pear
Kale (cleaned and chopped)
Spinach (cleaned and chopped)
Egg
Cooking oil of choice (I use coconut or avocado)
Preheat a skillet pan on medium heat with your oil of choice.
Add diced bell pepper and pear and start cooking. After they start to soften I add the precooked sweet potato and squash. (If using fresh sweet potato or squash I will add at the same time as pear and bell pepper) Stir frequently.
After about 5-10 minutes of cooking (as the sweet potato/squash soften) add kale and spinach and continue to stir frequently.
After the kale and spinach are wilting & softening I add the chicken. (Sometimes I toss chicken in hot sauce for a little heat and counters with the pear & sweet potato) Once the ingredients are cooked through move the hash to side and add egg(s) and cook to desired firmness.
Another reason I love breakfast hash is you can cook it once and then reheat during the week! Easy peasy!
